Freeze-Dried Strawberries

Fresh strawberries next to a measuring cup of freeze-dried strawberries on a wooden table. Red hues dominate the vibrant scene.

Freeze-dried strawberries are the secret ingredient that gives the crunch layer its incredible flavor. Unlike fresh or dehydrated strawberries, freeze-dried berries retain their vibrant color and tangy sweetness without adding moisture. This means they crush beautifully into a fine, flavorful powder that blends effortlessly with cookie crumbs. They provide intense strawberry flavor in every single crunch and help create that signature nostalgic “Scooter Crunch” taste everyone remembers from childhood treats.

Nilla Wafers

Nilla Wafers bring buttery, vanilla-cookie bliss to the crunch coating. Their mild sweetness balances the bold strawberry flavor while adding essential texture. When crushed and mixed with melted butter, they form the perfect crumb that sticks to the frosting and creates the signature crackly exterior. They’re the classic cookie that pairs beautifully with both strawberry and vanilla — making them the ideal addition for this layered cake.

Recipe Origin

Two raw eggs on pink cake mix in a white bowl, set on a wooden surface, creating a colorful baking preparation scene.

This cake draws direct inspiration from the beloved Strawberry Shortcake ice cream bar — a childhood treat that still sparks joy for so many people. The crunchy strawberry-vanilla coating of those iconic bars is unforgettable, and home bakers started recreating that flavor in dessert form years ago. The “Scooter Crunch Cake,” as many call it, became a fun twist on traditional layered cakes, offering that nostalgic crunch in full dessert form.

What makes this recipe special is how it blends simplicity with nostalgia. You use boxed cake mixes to keep the process quick and foolproof, yet the final product looks gourmet and tastes like a bakery creation. The freeze-dried strawberry crunch coating adds instant color, texture, and flavor, turning a simple layer cake into a centerpiece-worthy dessert. It’s fun, whimsical, and perfect for celebrations — a little piece of childhood wrapped in frosting and crunch.

A strawberry crumble cake on a white stand, topped with fresh strawberries, set against a bright window and gray curtain background.

Ingredients

For the Cake:

  • 1 box vanilla cake mix (plus ingredients listed on the package)

  • 1 box strawberry cake mix (plus ingredients listed on the package)

For the Frosting:

  • 1 ½ cups salted butter, softened

  • 1 (8 oz) block cream cheese, softened

  • 1 (2 lb) bag powdered sugar

  • 2 teaspoons pure vanilla extract

  • 2–3 tablespoons heavy cream

For the Strawberry Crunch:

  • 1 cup freeze-dried strawberries

  • ½ box Nilla Wafers, crushed

  • 3 tablespoons melted butter

  • Fresh strawberries, for garnish

Instructions:

  1. Preheat the oven to 350°F. Line four 9-inch round cake pans with parchment paper and grease with cooking spray.

  2. Prepare each cake mix according to package directions. Divide the batter evenly between the four pans, making two vanilla layers and two strawberry layers. Bake as directed on the box. Cool in the pans for 10 minutes, then invert onto wire racks to cool completely.

  3. To make the frosting, beat the butter and cream cheese in a large bowl with a hand mixer or stand mixer on medium speed until smooth. Add the vanilla and 2 tablespoons heavy cream and mix to combine. Gradually add the powdered sugar, beating until fluffy. Add an additional tablespoon of cream if needed to reach a spreadable consistency.

  4. Place a small dab of frosting on a cake plate to secure the cake. Add the first strawberry layer and spread frosting on top. Add a vanilla layer and frost. Repeat with the remaining strawberry and vanilla layers. Frost the sides of the cake and set aside.

  5. Place freeze-dried strawberries and Nilla Wafers in a large zip-top bag. Crush with a rolling pin, then add melted butter and toss to combine. Press the mixture onto the top and sides of the frosted cake to coat completely.

  6. Garnish with fresh strawberries before serving, if desired.
