Ingredients

For the Cauliflower
1 large head cauliflower (about 2½ pounds), leaves removed
4 tablespoons good-quality olive oil

2 tablespoons freshly grated Parmesan cheese

Instructions
Preheat your oven to 425°F.
Cut the cauliflower in half through the core and remove the core. Place each half cut-side down and slice into approximately ¾-inch-thick pieces. Gently separate the slices into large florets.
Arrange the cauliflower on a large sheet pan. Drizzle with 4 tablespoons olive oil, season generously with kosher salt and black pepper, and toss until evenly coated.
Spread the cauliflower into a single layer and roast for 25–30 minutes, turning halfway through, until tender and deeply golden around the edges.
While the cauliflower roasts, prepare the sauce. In a small saucepan over medium heat, melt the butter with the remaining 2 tablespoons olive oil.
Stir in the anchovy paste and cook for about 1 minute, breaking it up until it dissolves into the butter and oil.
Add the minced garlic and cook for another minute, just until fragrant.
Remove the saucepan from the heat. Stir in the lemon zest, lemon juice, crushed red pepper flakes, and chopped capers.
