Ingredients:

  • 2 teaspoons kosher salt, divided

  • 1 lb penne pasta

  • 1 tablespoon + â…“ cup extra virgin olive oil

  • 1 lb ripe tomatoes, peeled, seeded, and coarsely chopped

  • 5 cloves garlic, minced

  • ½ cup fresh basil, coarsely chopped

  • ¼ cup Italian (flat-leaf) parsley, finely chopped

  • ¼ cup red wine vinegar

  • 1 lb fresh mozzarella, cut into 1-inch cubes

  • ½ cup grated Parmesan cheese

  • ½ teaspoon freshly ground black pepper (or to taste)


Instructions:

  1. Bring a large pot of water (about two-thirds full) to a boil over high heat. Add 1 teaspoon kosher salt.

  2. Add pasta and cook according to package directions until al dente. Stir occasionally.

  3. Drain the pasta and transfer to a large serving or mixing bowl. Toss with 1 tablespoon olive oil to prevent sticking. Let cool slightly.
