  • 1 cup fresh parsley

  • 2 garlic cloves, grated

  • 1 scallion, finely chopped

  • Zest and juice of 1 lemon

Potatoes

  • 1½ pounds creamer or fingerling potatoes

  • 2 tablespoons olive oil

  • Kosher salt and freshly ground black pepper

  • 16 ounces Havarti cheese, sliced into ¼-inch-thick slices

  • Juice of 1 lemon (optional)


Instructions

  1. Prepare the herbed topping: On a cutting board, finely chop the basil, parsley, garlic, scallion, and lemon zest together. Squeeze a small amount of lemon juice over the mixture, season with a pinch of salt, stir, and set aside.

  2. Preheat the oven to 400°F.

  3. Steam the potatoes until fork-tender, about 15–20 minutes once steaming steadily. Remove from heat and let cool slightly. Slice larger potatoes in half lengthwise, leaving smaller ones whole.

  4. Brush a large cast-iron pan or baking sheet with olive oil. Arrange the potatoes in a single layer, cut side down. Season with salt and pepper.

  5. Roast for about 25 minutes, or until the potatoes are golden and crispy.
