Potatoes
1½ pounds creamer or fingerling potatoes
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
16 ounces Havarti cheese, sliced into ¼-inch-thick slices
Juice of 1 lemon (optional)
Instructions
Prepare the herbed topping: On a cutting board, finely chop the basil, parsley, garlic, scallion, and lemon zest together. Squeeze a small amount of lemon juice over the mixture, season with a pinch of salt, stir, and set aside.
Preheat the oven to 400°F.
Steam the potatoes until fork-tender, about 15–20 minutes once steaming steadily. Remove from heat and let cool slightly. Slice larger potatoes in half lengthwise, leaving smaller ones whole.
Brush a large cast-iron pan or baking sheet with olive oil. Arrange the potatoes in a single layer, cut side down. Season with salt and pepper.
Roast for about 25 minutes, or until the potatoes are golden and crispy.
Transfer the potatoes to a serving dish or leave them in the pan. Sprinkle the herbed topping evenly over the potatoes.
Melt the Havarti in a nonstick pan over medium heat or under the oven broiler until just melted.
