Ingredients

For the Trout

  • 2–3 rainbow trout fillets (about 4 ounces each), skin on, pin bones removed

  • ¼ teaspoon kosher salt

  • ¼ teaspoon freshly ground black pepper

  • ½ teaspoon paprika

  • ¼ teaspoon garlic powder

  • 1 tablespoon butter

  • 1 tablespoon olive oil


For the Lemon Caper Sauce

  • 4 tablespoons unsalted butter

  • 2 cloves garlic, minced

  • 2 tablespoons fresh lemon juice

  • Zest of ½ lemon

  • 2 tablespoons dry white wine

  • 1 tablespoon capers, drained

  • 2 tablespoons fresh flat-leaf parsley, minced


Instructions

  1. Pat the trout fillets completely dry with paper towels.

  2. Season both sides with kosher salt, black pepper, paprika, and garlic powder.

  3. Heat 1 tablespoon butter and the olive oil in a large skillet over medium-high heat until the butter begins to foam.

  4. Place the trout in the skillet skin-side down. Gently press each fillet with a wide spatula for the first 20–30 seconds to ensure full contact with the pan.

  5. Cook for about 3 minutes, or until the skin is crisp and golden brown.

  6. Carefully flip the fillets, reduce the heat to medium, and cook for another 2–3 minutes, or until the fish flakes easily with a fork.

  7. Add the remaining 4 tablespoons butter, minced garlic, lemon zest, and lemon juice to the skillet. As the butter melts, continuously spoon the sauce over the trout for about 1 minute.

  8. Remove the trout from the skillet and set aside on serving plates.

  9. Add the white wine and capers to the skillet, scraping up any browned bits from the bottom of the pan. Simmer for about 1 minute until slightly reduced.

  10. Spoon the buttery lemon caper sauce over each trout fillet and garnish with fresh parsley. Serve immediately.
