Salmon

Salmon is one of the most beloved fish in kitchens around the world thanks to its rich flavor and versatility. Naturally high in omega-3 fatty acids, protein, and essential nutrients like vitamin D and B12, salmon is both nutritious and satisfying. Its firm texture holds up beautifully when roasted or broiled, making it perfect for recipes that call for crisp edges and tender centers.

Another reason salmon works so well in this dish is its ability to absorb bold flavors. The sweet heat of the hot honey glaze complements the natural richness of the fish, while broiling creates slightly caramelized edges that bring out salmon’s savory depth. Cut into bite-size pieces, it cooks quickly and evenly, making it ideal for weeknight meals.

Feta Cheese

Feta cheese adds a bright, tangy punch that balances the sweetness of the honey and the heat from the spices. Traditionally made from sheep’s milk or a blend of sheep and goat milk, feta has a crumbly texture and salty bite that instantly elevates salads, bowls, and Mediterranean-inspired dishes.

In this recipe, feta becomes the star of a fresh salsa packed with herbs, sesame seeds, and jalapeño. The creamy yet crumbly texture melts slightly into the warm rice and salmon, creating bursts of savory flavor throughout the bowl. It’s the perfect counterpoint to the spicy honey glaze and creamy cilantro ranch.

Tips, Serving Suggestions, and Storage

Diced red, yellow, and green vegetables on a wooden cutting board with a lemon, spices in a bowl, and a knife. Bright, organized setup.
  1. Pat the salmon dry before seasoning. Removing excess moisture helps the salmon roast and crisp more effectively in the oven.

  2. Cut the salmon into evenly sized pieces so they cook at the same rate and develop consistent caramelization.

  3. Do not overcook the salmon during the roasting stage since it will continue cooking under the broiler.

  4. Broiling for the final step helps create slightly crispy edges that give the salmon extra texture and flavor.

  5. If you prefer milder heat, reduce the cayenne pepper or hot sauce in the hot honey glaze.

  6. Brown rice, jasmine rice, or even quinoa work well as the base for these bowls.

  7. The feta salsa can be made ahead of time and stored in the refrigerator for up to two days.

  8. Leftover salmon can be reheated gently in a skillet or enjoyed cold over salads.

  9. For extra crunch, add sliced cucumbers, shredded cabbage, or toasted nuts to the bowl.

  10. Store leftover components separately in airtight containers to maintain freshness and texture.

Bowls

  • 3–4 cups cooked rice

  • 2 carrots, finely diced

  • 2 celery stalks, finely diced

Feta Salsa

  • 1 jalapeño, diced

  • 1/2 cup fresh cilantro, chopped

  • 2 tablespoons fresh dill, chopped

  • 1/2 cup crumbled feta cheese

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon lemon juice

  • 1/3 cup toasted sesame seeds

  • Kosher salt, to taste

Cilantro Ranch

  • 1/2 cup plain Greek yogurt or sour cream

  • 1/3 cup mayonnaise

  • 2 tablespoons buttermilk

  • 1 cup fresh cilantro

  • 1/4 cup fresh chopped chives

  • 2 teaspoons Worcestershire sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/4 teaspoon cayenne pepper

  • Pinch of kosher salt and black pepper

Instructions

  1. Preheat the oven to 450°F.

  2. Make the cilantro ranch: in a blender or food processor combine the Greek yogurt (or sour cream), mayonnaise, buttermilk, cilantro, chives, Worcestershire sauce, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Blend until smooth and creamy. Refrigerate until ready to serve.

  3. Roast the salmon: On a baking sheet, toss the salmon pieces with 3 tablespoons olive oil, smoked paprika, salt, and pepper. Arrange the salmon in a single layer. Roast for 10–15 minutes, until the salmon is just slightly underdone.

  4. Make the hot honey: in a small saucepan, warm together the honey, hot sauce, cayenne pepper, chipotle chili powder, onion powder, garlic powder, and salt. Stir until smooth and warmed through.

  5. Spoon some of the hot honey over the salmon. Switch the oven to broil and broil the salmon for a few minutes until lightly charred and crispy. Spoon additional hot honey over the salmon to taste.

  6. Prepare the feta salsa: in a bowl, combine the jalapeño, cilantro, dill, feta cheese, olive oil, lemon juice, and toasted sesame seeds. Season with salt and gently toss to combine.

  7. Assemble the bowls: Add about 1 cup of rice to each serving bowl. Top with diced carrots and celery, then sprinkle with feta salsa. Arrange the crispy salmon over the top.

  8. Serve with cilantro ranch on the side or drizzled over the bowl.
