  • 1 tablespoon canola oil

  • 1 can charro beans, drained

  • 1 tablespoon fresh lime juice

  • Kosher salt, to taste


For the Huevos Rancheros
  • 2 large eggs

  • Kosher salt and black pepper, to taste

  • Canola oil, for frying

  • 2 corn tortillas

  • ½ cup canned enchilada sauce or our Homemade Enchilada Sauce

  • ¼ cup crumbled Cotija cheese

  • 2 tablespoons salsa or pico de gallo

  • Fresh cilantro leaves, for garnish


Instructions

Prepare the Beans

  1. Heat 1 tablespoon canola oil in a small saucepan over medium heat until shimmering.

  2. Add the drained charro beans and cook for 4–5 minutes.

  3. Reduce the heat to low. Using a potato masher or the back of a fork, mash about half of the beans, or more if you prefer a smoother consistency.

  4. Continue cooking, uncovered, for 3 minutes, stirring frequently, until thickened.

  5. Remove from the heat and stir in the lime juice.

  6. Taste and adjust with additional salt and lime juice if desired. If the beans become too thick, stir in a small splash of water.

  7. Cover and keep warm.


Fry the Tortillas

  1. In a small skillet, heat about ¼ inch of canola oil over medium heat.

  2. Fry the tortillas for about 45 seconds, flipping halfway through, until lightly crisp.

  3. Transfer to paper towels to drain.
