Mascarpone Cheesecake Squares with Blueberry Sauce

½ cup chopped pecans
½ cup granulated sugar
1 teaspoon kosher salt

Three 8-ounce containers mascarpone cheese, softened
1½ cups granulated sugar
1 tablespoon vanilla bean paste
4 large eggs
½ cup sour cream
For the Blueberry Sauce
4 cups frozen blueberries (the ingredient list says cherries, but the instructions use blueberries)
1½ cups granulated sugar
2 tablespoons cornstarch
4 tablespoons water
Instructions
Preheat the oven to 350°F. Place a pan of hot water on the bottom oven rack to create steam during baking.
Line a 9x13-inch baking pan with parchment paper, leaving enough overhang to lift the finished cheesecake out easily.
In a medium bowl, combine the graham cracker crumbs, chopped pecans, sugar, kosher salt, melted butter, and vanilla bean paste. Mix until evenly moistened.
Press the crumb mixture firmly into the prepared pan to create an even crust.
In the bowl of a stand mixer, beat the mascarpone, sugar, and vanilla bean paste until smooth and creamy.
Add the eggs one at a time, mixing well after each addition.
Mix in the sour cream just until incorporated.
Pour the filling over the prepared crust and smooth the top.
Bake for 50 minutes.
Turn off the oven and leave the door closed for 10 minutes.
Open the oven door halfway and allow the cheesecake to cool inside for another 10 minutes.
Meanwhile, prepare the blueberry sauce. Combine the blueberries and sugar in a saucepan over medium-high heat. Bring to a boil and cook for 4–5 minutes, stirring occasionally.
In a small bowl, whisk together the cornstarch and water to make a slurry. Stir it into the blueberries and continue cooking for 1–2 minutes, until the sauce thickens.
Remove the sauce from the heat and allow it to cool for about 30 minutes.
Spread the cooled blueberry sauce evenly over the cheesecake.
Refrigerate overnight until fully chilled and set.
Lift the cheesecake from the pan using the parchment paper and cut into squares with a long serrated knife. Clean the knife between cuts for neat slices.
