Brie Cheese

Brie is one of the most luxurious soft cheeses, known for its buttery texture, earthy aroma, and velvety interior. As it bakes, it becomes incredibly creamy and rich, making it perfect for puff pastry-based appetizers. Its mild flavor pairs beautiful with both sweet and savory toppings, allowing additions like fig spread, spicy elements, and herbs to shine. In these brie bites, it melts down into smooth, indulgent pools that contrast perfectly with the crisp pastry.

Fig Spread

Fig spread brings natural sweetness, a hint of warmth, and a jammy texture that elevates each bite into something truly elegant. Its rich fruitiness pairs flawlessly with creamy cheeses, and its subtle caramel-like flavor complements the nuttiness of the pecans and the herbaceous rosemary. Whether you’re using a spicy fig spread or a classic version, this ingredient provides the flavor balance that makes this appetizer so addictive.

Recipe Origin

Hand cuts dough into squares with a pizza cutter on a wooden countertop.

This recipe is inspired by the classic baked brie that appears on many holiday tables — a simple wheel of brie wrapped in pastry and paired with sweet jam or nuts. But instead of a large baked brie that needs slicing and serving, these puff pastry bites capture all the same flavors in a mess-free, grab-and-go format. They’re perfect for hosting because guests can enjoy an elevated appetizer without the need for a knife, cutting board, or plating.

Hands roll dough on a floured wooden cutting board. Fresh rosemary and chopped nuts are nearby. Measuring spoons rest on the board.

The addition of rosemary, spicy fig spread, and toasty pecans adds a gourmet twist that feels incredibly festive. Puff pastry creates a crisp but delicate shell that cradles the gooey brie, while the toppings add contrasting textures and warm, layered flavors. These bites were created to feel indulgent yet effortless — something beautiful to bring to a holiday gathering or to serve alongside a glass of wine on a cozy evening at home.

Tips, Serving Suggestions & Storage Advice

Baking tray with uncooked pastry cups sprinkled with herbs. Close-up view, showing a baking preparation scene in a kitchen.
  • Keep the brie cold while preparing the pastry — it cuts cleaner and melts more evenly.

  • Chill the pastry for 10 minutes before baking to improve puff and flakiness.

  • Use a tart tamper or the bottom of a spice jar to press pastry into mini muffin cups.

  • Don’t overfill the pastry cups — brie expands as it melts.

  • Use parchment-lined baking sheets under the pan to catch any cheese overflow.

  • Toast pecans ahead of time for deeper flavor and crunch.

  • Swap rosemary for thyme if you prefer a softer, earthier flavor.

  • Add the fig spread after baking to prevent burning or caramelization.

  • Serve warm or at room temperature — both are delicious.

  • Store leftovers in an airtight container and reheat at 350°F for 5–7 minutes.

  • If using a spicy fig spread, mix with a little honey to soften the heat.

  • These freeze well unbaked; bake from frozen with 1–2 extra minutes.

Spicy Puff Pastry Brie Bites

Golden-brown pastry cups filled with melted cheese, topped with fig jam, nuts, and rosemary on a dark slate background.

Ingredients

  • Olive oil cooking spray (for the pan)

  • 8 oz brie cheese

  • 1 sheet frozen puff pastry, thawed

  • All-purpose flour, for rolling

  • 1 tsp finely chopped fresh rosemary, plus extra rosemary leaves for garnish

  • ⅓ cup Cili Fig Spread (or spicy fig spread)

Instructions

  1. Preheat oven to 375°F. Lightly spray a 24-cup mini muffin tin with olive oil cooking spray.

  3. On a lightly floured surface, roll the puff pastry into an 11x13-inch rectangle.

  4. Cut the sheet crosswise into 6 equal strips, then lengthwise into 4 strips, creating 24 small rectangles.

  5. Gently press each puff pastry rectangle into a well of the mini muffin tin, ensuring the bottom is flush against the pan.

  6. Sprinkle a bit of chopped rosemary into each pastry cup, then place one piece of brie inside.

  7. Bake for 18–22 minutes, or until pastry is golden brown and brie is melted.

  8. Remove from the oven and cool for 2 minutes.

  9. Top each brie bite with about ½ teaspoon fig spread.

  10. Sprinkle with toasted pecans and garnish with rosemary leaves.

  11. Transfer to a serving plate and serve warm or at room temperature.

Savory pastries topped with nuts, herbs, and a glaze, arranged on a dark slate surface. Soft lighting enhances their golden crust.

FAQ Section

Golden puff pastry topped with chutney, nuts, and rosemary on a dark slate background. Rustic and inviting presentation.

Can I use a different cheese?

Camembert or triple-cream brie work beautifully.

What if I can’t find fig spread?

Apricot preserves, hot pepper jelly, or raspberry jam are great substitutes.

Can I use crescent dough instead of puff pastry?

Yes, but the texture will be softer and less flaky.

How spicy is this recipe?

It depends on the fig spread. You can control the heat by choosing mild or spicy varieties.

Can I bake these ahead?

They’re best fresh, but can be reheated at 350°F for 5 minutes.

Do they freeze well?

Yes — freeze unbaked pastry cups with brie, then bake from frozen.

Why refrigerate the brie pieces?

Cold brie melts more slowly and stays neatly inside the pastry.

Can I add hot honey?

Absolutely — a drizzle before serving takes these over the top.
