We arrived around 5 p.m. on opening day, full of excitement and curiosity. The host greeted us with a big smile and friendly energy that set the tone for the evening. We chose to sit at the sushi bar — always our favorite spot to watch the artistry unfold. To our surprise and delight, we spotted our friend Arul working behind the counter! We met Arul years ago at another restaurant, and seeing his familiar smile instantly made us feel at home. Arul is one of those people who radiates warmth and kindness, and his presence alone assured us we were in for a great experience.
Our waitress greeted us promptly and took our drink order with a cheerful attitude. Before we could even decide what to order, the chef treated us to not one, but two complimentary sushi samples — talk about first-class hospitality! The first was a Yellowtail Sashimi, sliced paper-thin and placed atop a delicate, savory sauce, then topped with a thin jalapeño slice and a touch of sriracha. Each bite was a perfect balance of buttery texture, bright citrusy heat, and that clean ocean flavor you can only get from truly fresh fish.

The second sample was just as impressive — a small mound of crab salad wrapped in creamy avocado and topped with vibrant orange tobiko (flying fish roe). It was rich yet refreshing, with a satisfying mix of textures: silky avocado, tender crab, and the pop of tobiko adding the perfect finishing touch.

For appetizers, we started with the Gyoza, traditional Japanese fried pork dumplings. These arrived golden brown and crisp on the outside, with a juicy, flavorful pork filling that had just the right blend of garlic, ginger, and sesame. Each bite had that comforting umami flavor that makes gyoza such a favorite. Next came the Tuna Tataki — seared fresh tuna lightly drizzled with tangy ponzu sauce. The flavor was incredible: a smoky edge from the quick sear, balanced by the tart, citrusy ponzu that enhanced the tuna’s natural sweetness. It was light, fresh, and beautifully plated.

For entrées, we tried two of their specialty rolls. The Ohio Roll featured spicy salmon and crunchy bits inside, topped with fresh tuna and masago (smelt roe). The combination was spot on — spicy, creamy, and crisp all at once, with the masago adding that subtle ocean saltiness. Every bite delivered a satisfying mix of textures and flavor that made it hard to stop eating.

Our second roll, the Oishi Roll, might just become our new favorite. It was filled with tuna, salmon, fish, and jalapeño, then deep fried to golden perfection and finished with a drizzle of eel sauce, a touch of hot sauce, and fresh green onions. It had a deliciously rich crunch, a hint of spice, and that perfect sweet-savory balance from the sauces.

For a grand opening night, the service at Sushi One couldn’t have been better. Every staff member we encountered was friendly, attentive, and genuinely seemed to care about making sure guests had a great time.
