Instructions
In a large skillet over medium-low heat, cook the chopped pancetta until browned and crispy, about 10 minutes. Transfer the pancetta to a paper towel-lined plate, leaving about 1 tablespoon of the rendered fat in the skillet. Discard or save the remaining drippings for another use.
