There’s something exciting about seeing a new concept take root in downtown Charleston—especially when it brings a fresh, modern approach to healthy eating. Nestled inside the Fifth Third Bank Building, in the space formerly home to Loopy Leef, Haystax is carving out its own identity as a vibrant, build-your-own vegetarian bowl destination.

From the moment we stepped inside, it was clear this wasn’t just another grab-and-go spot—it’s an experience. Owner and Chef Mark Anthony was right at the front, greeting guests, taking orders, and keeping everything moving seamlessly. His energy is contagious, and his genuine enthusiasm sets the tone immediately. A warm smile and welcoming attitude go a long way, and here, it made all the difference.

Haystax offers a fast-casual, grab-and-go style, but it doesn’t sacrifice atmosphere. The space is bright and airy, with large front windows that flood the dining area with natural light. A row of high-top seating along the windows invites you to sit, relax, and take in the rhythm of downtown Charleston as it moves by outside.

The aesthetic feels clean and modern, yet approachable. The menu is prominently displayed, bold and easy to navigate, while the ordering area is lined with neatly arranged menu cards that guide you through your options. Behind the counter, everything runs like a well-oiled machine—staff moving efficiently, assembling bowls with precision while maintaining a friendly, welcoming vibe.

Despite visiting during a busy Tuesday lunch rush, the flow never felt chaotic. Orders were moving quickly, customers were engaged, and the entire operation felt smooth and intentional. It’s always a good sign when a place is buzzing—and even better when it handles that buzz effortlessly.

When you first walk in, you’re greeted by a bar-style ordering area filled with menu cards. The concept is simple but exciting: you can either choose a thoughtfully crafted signature bowl or build your own creation from an impressive lineup of ingredients.


Naturally, we had to try both.


The Asian Bowl

We started with The Asian, a beautifully layered bowl featuring confetti rice, sweet potato noodles, spiced potatoes, fresh spinach, carrots, beets, red cabbage, water chestnuts, bamboo shoots, seasoned tofu, dry Asian noodles, all finished with a sesame ginger sauce.

This bowl was a flavor-packed experience. The sesame ginger sauce brought a perfect balance of sweet, savory, and slightly tangy notes that tied everything together. The contrast of textures—from the crunch of fresh vegetables to the softness of the noodles and rice—made every bite interesting. The seasoned tofu added a satisfying, protein-rich component that held its own among the vibrant mix of ingredients. It’s the kind of dish that feels both indulgent and nourishing at the same time.

Our Custom Creation

For our second bowl, we took the build-your-own route, exploring a variety of different ingredients and topping it off with chipotle chicken and fresh avocado slices. This option allowed us to mix and match flavors to create something completely unique.
