Creamy Peanut Butter

Peanut butter is the heart and soul of these cookies. It brings not only that rich, nutty flavor but also a creamy texture that helps bind the dough without needing a ton of butter. Creamy peanut butter is ideal here for that smooth consistency—chunky varieties tend to interfere with the delicate crumb of these cookies. Fun fact: peanut butter was first patented by a Canadian pharmacist in 1884 as a protein source for patients without teeth!

Brown Sugar

Brown sugar adds a depth of flavor that you just can’t get with white sugar alone. Its molasses content lends a chewy, moist texture to the cookies and boosts their caramelized, toasty edge. In this recipe, we balance it with white sugar for a perfect mix of crispness and softness.

Recipe Origin | PEANUT BUTTER COOKIES

This peanut butter cookie recipe is inspired by the ones our grandmothers used to bake—back when you’d smell the sweet, nutty aroma from the next room and race into the kitchen hoping for a warm cookie (or two) straight off the tray. We’ve modernized the technique a bit—like using a tablespoon scoop for uniform size and chilling the dough for a better texture—but the soul of this cookie remains unchanged. It's one of those recipes that hits home, every time.

Tips, Serving Suggestions, or Storage Advice

  • Chill the Dough: Chilling prevents the cookies from spreading too much and improves the flavor. Don't skip it.

  • Room Temp Ingredients: Ensure your butter and egg are at room temperature for a smooth, even dough.

  • Use Creamy Peanut Butter: Natural or oily peanut butters can cause texture issues. Stick with a classic, creamy version.

  • Sugar Coating is Key: Rolling the dough balls in sugar gives a beautiful texture and crunch on the outside.

  • Don’t Overbake: The cookies will continue to cook slightly on the baking sheet after coming out of the oven.

  • Fork Marks Matter: The crisscross pattern isn’t just aesthetic—it helps the dense dough cook more evenly.

  • Add Chocolate Chips (Optional): Want a twist? Toss in ½ cup of chocolate chips for an even richer bite.

  • Cool on Baking Sheet First: This helps the cookies firm up before transferring them, reducing breakage.

  • Freezer Friendly: You can freeze the dough balls and bake them fresh whenever you need a cookie fix.

  • Storage: Store in an airtight container at room temperature for up to 5 days—or freeze for up to 3 months.

Peanut butter cookies on a dark slate, sprinkled with sugar, surrounded by shelled peanuts, creating a warm, inviting mood.

Peanut Butter Cookies

Ingredients:

  • 1 1/3 cups all-purpose flour

  • ½ teaspoon baking soda

  • ¼ teaspoon kosher salt

  • ½ cup unsalted butter, room temperature

  • ½ cup packed brown sugar

  • ¼ cup granulated sugar (plus ½ cup for rolling)

  • 1 cup creamy peanut butter

  • 1 extra-large egg, room temperature

  • 1 teaspoon pure vanilla extract

Instructions:

  1. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

  2. In a stand mixer fitted with the paddle attachment, beat the butter for 1 minute until creamy. Add the brown sugar and ¼ cup white sugar and beat on medium speed until light and fluffy.

  3. Add the peanut butter, egg, and vanilla extract. Mix until smooth and creamy.

  4. With the mixer on low, gradually add the dry ingredients a tablespoon at a time until just combined.

  5. Cover the dough and chill in the refrigerator for 1 to 2 hours.

  6. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

  7. Place the remaining ½ cup sugar in a shallow bowl.

  8. Using a 1-tablespoon scoop, portion the dough and roll into balls. Roll each ball in the sugar to coat, then place on the prepared baking sheets about 2 inches apart.

  9. Use a fork to gently press a crisscross pattern on each cookie. If needed, reshape for uniformity.

  10. Bake for 12–15 minutes, or until the edges are set but the centers are still soft.

  11. Cool on the baking sheet for 5–10 minutes before transferring to a wire rack to cool completely.

FAQ

Can I use natural peanut butter?

Natural peanut butter can affect the texture and spread. We recommend using traditional creamy peanut butter for best results.

Can I freeze the dough?

Yes! Roll into balls, freeze on a tray, then store in a zip-top bag. Bake straight from frozen, adding a minute or two to the bake time.

Why chill the dough?

Chilling helps prevent spreading and allows the flavors to deepen, giving you a better textured cookie.

What can I substitute for the extra-large egg?

If needed, use one large egg plus 1 tablespoon of water to mimic the moisture content of an extra-large egg.

Can I double this recipe?

Absolutely! This recipe scales well—just be sure your stand mixer can handle the volume.
