Ingredients
For the Shrimp
2 quarts water
1 bay leaf
½ lemon, sliced
2 tablespoons kosher salt
1 pound shrimp, peeled and deveined
For the Filling
1 teaspoon olive oil
3 tablespoons finely diced celery
2 tablespoons finely diced fennel
1 tablespoon finely diced shallot
¼ teaspoon kosher salt
½ cup mayonnaise (Duke's Light works great)
1 teaspoon Worcestershire sauce
¼ teaspoon Tabasco sauce
½ teaspoon grated lemon zest
½ teaspoon fresh lemon juice
½ teaspoon celery seed
1 teaspoon minced fresh chives
1 teaspoon minced fresh parsley
For Serving
6 soft split-top rolls or English-style hot dog buns
6 butter lettuce or Bibb lettuce leaves
Old Bay potato chips (optional)
Instructions
Bring the water to a boil in a medium saucepan. Add the bay leaf, lemon slices, and 2 tablespoons of kosher salt.
Add the shrimp and cook for about 2 minutes, or until they turn pink and are cooked through.
Transfer the shrimp immediately to an ice bath to stop the cooking process. Drain well and chop into bite-sized pieces.
Heat the olive oil in a small skillet over medium heat. Add the celery, fennel, and shallot. Cook for about 2 minutes until just softened. Transfer to a bowl and refrigerate until completely chilled.
In a large mixing bowl, combine the chopped shrimp, remaining ¼ teaspoon kosher salt, chilled vegetable mixture, mayonnaise, Worcestershire sauce, Tabasco, lemon zest, lemon juice, celery seed, chives, and parsley. Stir gently until everything is evenly coated.
Line each roll with a lettuce leaf and fill with about ½ cup of the shrimp mixture.
Serve immediately with Old Bay potato chips for the perfect seaside-inspired meal.
