12 rice paper rounds (22 cm)
1 cup matchstick-cut carrots
1 cup lightly packed fresh cilantro leaves
12 green leaf lettuce leaves, ribs removed and leaves cut into large pieces
For the Peanut Sauce
½ cup hoisin sauce
¼ cup creamy peanut butter
1 tablespoon rice vinegar
2 teaspoons freshly grated ginger
1 garlic clove, grated
¼ teaspoon crushed red pepper flakes, plus additional for garnish
¼ cup water
Instructions
Cook the rice vermicelli according to the package directions. Drain and rinse under cold water. Refrigerate until completely chilled.
Prepare the peanut sauce by whisking together the hoisin sauce, peanut butter, rice vinegar, ginger, garlic, crushed red pepper flakes, and water until smooth and fully combined.
Transfer the sauce to a serving bowl, garnish with a pinch of crushed red pepper flakes, cover, and refrigerate until ready to serve.
Lay out a stack of damp paper towels on your work surface. Fill a pie plate or shallow bowl with warm water.
Working with one rice paper wrapper at a time, dip it into the warm water and rotate gently until it becomes pliable, about 10–15 seconds.
Place the softened wrapper on the damp paper towels.
In the center of the wrapper, arrange approximately 3 shrimp halves pink side down. Add about 1 tablespoon of carrots, a few cilantro leaves, approximately 3 tablespoons of cooked vermicelli, and one piece of lettuce.
Fold the bottom edge of the rice paper over the filling. Fold in both sides and continue rolling tightly into a sealed cylinder.
Repeat the process with the remaining wrappers and filling ingredients to make 12 rolls.
